As a working mother who came from Brazil to Norway seven years ago, I had to adapt to a new life. Norwegians do everything in the house themselves. Ingen kjære mor (No dear mother) they say. In Brazil we have help to clean, cook, even babysit. Here in Norway, I had to learn how to cook from scratch. And to my surprise, I enjoyed it.
When we had the lockdown in Norway, we had another rhythm at home. Home office doesn’t give us much time to prepare food. Though eating well is part of the #keephealthy advise. I’ve got many requests from my friends in Brazil and in Norway, to share my recipes. I’ve selected some of my favorites, for our main meal as well as healthy snacks and (why not?) delicious dessert.
I’m not a food photographer, but I hope my pictures will awake your appetite.
I often have my child with me in the kitchen. I believe it’s creates a good atmosphere, nice bond and get her interested in tasting vegetables (my challenge).

Preparing a nutritious omelete. Pasta salad.
Carrot cake with chocolate fondant.
4 carrots (2 cups)
2 cups sugar
3 eggs
1 cup oil (I use coconut oil. You can use either neutral taste or original taste, which is stronger but I love it)
2 cups flour
1 table spoon baking soda
Topping
2 table spoon butter or margarine
4 table spoon water
4 table spoon cocoa powder
4 table spoon sugar
(I also add 4 table spoons milk)
Mix the first 4 ingredients in the blender.
Add the mix to the flour and baking soda in a large bowl.
Bake it in the oven 180 C or 356 F for around 35 minutes (depends on your oven).
450 ml milk (1 3/4 cups)
3 large eggs
125 ml butter (I melt it together with oat)
1 tea spoon vanilla extract
225 g flour (2 cups)
2 table spoons sugar
1/4 tea spoon salt
1) set the waffle iron
2) Mix the liquids in the blender
3) Then pour it in a large bowl together with the dry ingredients. Stir until it’s an even mixture.
4) Spread butter on the iron and then use a spoon to put some of the mix in it. Just like in the picture. Close it and wait a couple of minutes.
Traditional Brigadeiro with a child’s twist 😉 We find Condensed milk at Rema 1000 and Meny, in Norway.
You need Condensed Milk, Cocoa Powder (1 table spoon) and Butter (1 table spoon). Mix them together in a pan, cook it at medium then low temperature. Stir non stop until the mix loosen up from the bottom. Give each family member a spoon and have a great time.
Avocado + banana + granola + honey + lemon drops = yummy Healthy sweet quinoa pancakes.
I also love smoothies. I like to blend kale and spinach with banana (gives consistence and sweetens the smoothie), grapes and apple juice. There are thousands of ways to make smoothies. What’s your favorite?
