Norwegians and waffles

Yes, Norwegians love waffles. The International Waffle Day (March 25th) is celebrated in Norway, Sweden and Denmark. It’s coincidentally also the Christians’ Feast of the Annunciation (commemorates the visit of the archangel Gabriel to the Virgin Mary).

Waffles may not be originally from Norway, but they’ve found a good place in almost all Norwegians’ kitchens.

All kinds of volunteer work events have waffles to sell, all year round. The Lion’s Club, Cancer foundation, children’s football games, you name it. They sell waffles on the ferry and many typical historical places like Tungenes Fyr (Lighthouse in Randaberg, Rogaland).

On Norway’s National Day, 17th of May, street vendors sell hot dogs, ice cream and waffles.

I’ve learned to make waffles and whenever we have guests during the day (specially with children) I make waffles. Here at home, we like to serve waffles with homemade jam, sour cream, blueberries, raspberries or strawberries, and brunost (the famous brown cheese). Sometimes they’re so good I can eat them without toppings. And I usually add oat flakes to the recipe.

Waffle’s cousin, called lapper (patch), is very similar, but instead of waffle iron, we use a flat round huge iron.

Here’s my easy waffles recipe (If I could learn it, everyone can) :

450 ml milk (1 and 3/4 cup)

3 large eggs. Whole.

125 ml melted butter (I mix it with 2 tablespoons oat flakes in a small pan until the butter melts)

2 cups wheat flour

2 tablespoons sugar

1/2 teaspoon salt.

1 tablespoon vanilla extract.

Turn on the waffle iron first.

Step 1 – Blend the liquids first, in the blender. (eggs, milk, vanilla, butter)

Step 2 – In a large bowl, put the dry ingredients (flour, salt, sugar) and mix.

Step 3 – Pour the liquid mix with the rest in the large bowl.

If you have time and wish to make them even fluffier, you can whisk the egg whites separately. I am happy the way I do it. And so are my guests. 🙂

Spread butter on the waffle iron with a proper brush. Put a full table spoon with the mix on the iron place.
